OK Izzy Hive- I have 4 (four) separate Planar 100" UXP displays. 4k native. My hardware is:

      3.5 GHz 8-Core Intel Xeon W

      48 GB 2666 MHz DDR4

AMD Radeon Pro 580X 8 GB

two are on HDMI , two are on Thunderbolt 3 -> HDMI adapters

Am I correct in thinking having 4 separate outs playing still images at 4k ought to be just fine?

      How about short videos?

Yes, still images will be rather light weight.

It seems like your HDMI connections should do the trick. ( I believe AMD allows 6 displays connected total? )

Videos will greatly depend on your drives. If you have multiple fast internal drives, and split up the video so that they are located across the drives, you should be able to make it work.
It's worth doing drive speed tests for each drive, as well as, working out the transfer requirements of each video type (4k in X codec requires MS/s)
