Record Stage Settings

Hello y'all. I'm trying to record my stage with uber high quality (im using apple pro res 4444 at 900 max mbps) but I do not know what the setting for key frames does? what does key frames every __ frames mean? and what would be a good high(est) quality setting be? I searched for a forum topic discussing this and couldn't find any. thanks for the help!
