Mac Mini to run 2 projectors and use Kinect

Hi there, the all time novice on hardware here:)
I imagine that a Mac Mini can do my job and am looking for a suitable solution to run: 2 projectors, a kinect camea, a leap motion, more than one live camera and also having an input for my Korg Nano controll.
Can any more experienced kind person help me with what would be minimal, to make it smooth? And if there is anything to take into consideration?
